Himalayan Chamomile Lavender - Batch 1/9

A caffeine-free blend of whole chamomile flowers and lavender, put together for the end of the day. Chamomile gives the cup its soft, honeyed body, and the lavender is measured with restraint, so it reads as a cool floral note rather than soap. The taste is gentle and settles quickly.

The chamomile is grown by smallholder farms around Dhankuta in the eastern Nepal foothills, at about 1,200 metres. Whole flowers matter here: crushed chamomile dust steeps fast and turns flat, while intact flower heads give up their character slowly and cleanly. This batch was harvested between 20 and 25 April 2026.

How we brew it: a generous tablespoon per cup, water at a full boil, five minutes with a lid on the cup so the aromatics stay in the water instead of the air. A little honey suits it. There is no caffeine, so steeping longer makes it deeper, not harsher.

Chamomile has been the after-dinner pot in half the world's kitchens for generations. We will not promise it fixes your sleep, only that it is a calm way to end the evening, and that the flowers in this tin were whole when we sealed it.

Steep 1 teaspoon of leaves in 200ml of water at 85°C for 3 minutes. Re-steep up to 4 times for evolving flavor profiles.
